Meal Plan Monday January 22 2018


Here's what is planned for our meals this week. I might change it depending on what leftovers we need to use up but I like to make the plan and have the ingredients available for this plan or for future use. We're still working out of the pantry and freezer for the majority of our meals.

Bean & Cheese Quesadillas: We have fresh tortillas we need to use up in the fridge, cans of refried beans downstairs, and shredded cheese frozen in the freezer. I'll also make rice to serve on the side.

Muffins: I made a bulk batch of pumpkin muffins last Saturday and froze. A quick reheat in the microwave for 20-30 seconds and they're back to oven-fresh. https://www.verybestbaking.com/recipes/144769/libbys-pumpkin-muffins/

Tuna Casserole: We have several cans of tuna in our food storage that I'd like to use up and several packages of pasta so this seems like a no-brainer recipe. Now to get the family on board with eating it!

Pesto Chicken Pasta: We have pesto frozen in the freezer, several packages of pasta, and 40 lbs of frozen chicken breast. I'll be combining the three into a pasta dish.

Chili: I don't have a homemade recipe for you, sorry! We've been using up the cans of chili in our food storage.

Meatballs Subs: I've been able to get pre-made frozen meatballs for a great price so I'll be using those rather than making my own meatballs. I'll use leftover pizza dipping sauce mixed into store bought canned pasta sauce. Mozzarella cheese is frozen in our freezer.
