Meal Plan Monday February 12, 2018



I bulk prepped waffles last Saturday using this recipe. I ended up doing a triple batch of the recipe. I don't have wheat germ but I do have a bag of flaxseed meal, so I subbed 3/4 cup of flaxseed for flour. http://www.geniuskitchen.com/recipe/basic-batter-waffles-110683


Sandwiches: Sandwiches are always made with homemade white bread and then either peanut butter and jelly or lunch-meat and cheese. When I find lunch-meat for a good price I'll stock up and freeze it. Rosemary Chicken: 1 lb of chicken breasts, 1-3 T of rosemary (I'd err on the lighter side), 3 cloves of garlic, 1.5 T lemon juice, 1.5 T olive oil, salt and pepper to taste. Coat breasts in lemon juice and olive oil mixture. Add seasonings and garlic. Bake at 375 for 25 minutes.


Roasted Veggies: I'll make roasted veggies with a dry onion soup mix. Essentially you cut up your veggies, I'll be using the last of some red potatoes I purchased 20 for $1, as well as carrots. You then add 1-2 T of olive oil to coat the veggies and then toss the dry soup mix. Bake for 1 hour in 425 oven. Delicious!


Tacos: I make our taco meat with ground turkey, a can of kidney beans, and homemade taco seasoning. Taco shells were purchased on sale with a coupon for $0.49.



Pork Taquitos: I'll be making it with canned pulled pork from Costco. I may or may not add a can of beans to the mix and seasoning. It'll depend on my mood! I like adding canned beans because it stretches the meat and allows for more servings. I bought tortillas for $0.99/10 pack. Add 1-2 T of meat to tortilla. Roll and fry in vegetable oil. Drain on paper towels. So Yummy! If I don't add beans to the meat, I'll serve with refried beans on the side.


The soup and chili we have for lunch is canned. We're trying to eat all of our food storage. I'm down to only 2 cans of chicken noodle. But we still have 7 cans of tomato soup.


Hot dogs are in the freezer and were purchased at their lowest price, about $0.49.


Tortellini: I bought several packages of tortellini at Smith's on a Saturday-only deal. This is our last package. I'll also be using my last bit of frozen pasta sauce. I'll serve with Texas Toast purchased on my last grocery trip.


Taco Soup: This was on our meal plan last week, but I ended up making Cream of Broccoli soup instead. Recipe: https://www.sixsistersstuff.com/recipe/2016/02/seven-can-chicken-tortilla-soup/. I really enjoy this because it uses several canned items which we have in our food storage. It's also easy to add or substitute this recipe and still end up with a tasty soup!


Thankgiving Dinner: I'll be cooking one of the frozen turkeys in our freezer. I'll cube some of the meat and freeze for future meals. We're having cousins/friends over for dinner and we'll be making mashed potatoes and they'll be bringing other sides and desserts to enjoy.
